Cauliflower, yes please!

…and hello November! I can’t believe how fast time goes… already in November, with the Christmas lights on the streets J and 14 degrees in autumn, in Dublin…this is unbelievable! The weather so far has been good in Ireland, apart from a couple of days where it was freezing cold and we had Ophelia Hurricaine and Brian storm... Yesterday we cooked at home a new recipe I want to share with you, as it’s a perfect way to eat cauliflower! We made a delicious pizza with a cauliflower base. It’s so easy to make, healthy and it has so many options to serve with, in my case we made the pizza with veggies but you can serve it with ham and cheese, mushrooms, meat, etc

Here you have the steps to make this flour-less pizza:

Ingredients for the cauliflower base:

  • 1 cauliflower

  • 30 gr ground almond

  • 2 eggs

  • Salt

  • Pepper

  • Ground garlic

  • Provençale herbs

  • Parmigiana cheese

How to cook it:

  • Pre-heat the oven to 180 degrees and prepare the ingredients.

  • As we made the pizza with veggies, we wash the vegetables you prefer ( in my case zucchini, eggplant, onions) and cut them in slides and put them in a tray. We add a little bit of oil on top and place them in the oven, so they start roasting while we prepare the pizza base.

  • We wash the cauliflower and cut it in small pieces to put them into a blender, so we leave the cauliflower in a ‘cous cous’ format.

  • In a big bowl, we mix well the cauliflower, eggs, ground almond, salt, pepper, herbs, garlic and cheese. Once it’s all well mixed, we spread this mix on a tray (I use a silicone tray) using a spoon. We need to spread the mix well leaving a thin base.

  • Bake it for around 20-30 min (always check it, but it should be a bit of gold color and a bit dry to the touch).

  • Then, we add tomato sauce and the ingredients we want for the pizza, in my case the veggies, and add more cheese on top (I love cheese!) and l bake it around 5 min more.

  • You can add oregano and serve it!

This is a really good way to eat cauliflower, and make it at home with the kids. Please try it at home and let me know how it goes for you and the ingredients you use for your pizza!
